A baking tray with four pieces of baked salmon topped with lemon slices and dill, between roasted broccoli and green beans.

Method

  1. Step 1: Preheat the oven to 200 °C (180 °C fan) and line a baking tray with baking paper.

  2. Step 2: Spread 250 g broccoli and 200 g green beans over the tray, drizzle with 2 tbsp olive oil and toss. Roast for 8 minutes.

    Timer 8 min

  3. Step 3: Take the tray out of the oven and push the vegetables to one side. Put 250 g salmon fillet in the space, skin side down if it has skin. Brush the salmon with 2 tsp mustard, lay slices of 1 lemon on top and sprinkle 1 tsp salt and pepper over the salmon and the vegetables.

  4. Step 4: Return the tray to the oven and roast for another 12 minutes, until the salmon is cooked at the thickest point and flakes easily. Meanwhile, finely chop 1 handful dill.

    Timer 12 min

  5. Step 5: Scatter the dill over the salmon and vegetables. Squeeze the roasted lemon slices over the top and bring the tray to the table.

About this recipe

Everything on one tray was the starting point. The vegetables get an 8-minute head start because they need the longest, then you slide the salmon in beside them. The mustard gives the fish a sharp coating, and the dill only goes on at the end so it stays fresh.

Tips

  • Thin pieces of salmon cook sooner than thick ones. Check the thickest point a few minutes before the timer goes off.
  • Want something on the side? Rice or boiled baby potatoes can be ready in the time the tray is in the oven.
  • Keep the vegetables in a single layer. If they pile up, they steam instead of browning. Cooking for a lot more people? Use a second tray and swap their positions halfway.
