A plate of roasted chicken thighs, halved baby potatoes and strips of red and yellow bell pepper with parsley, on a wooden table with an air fryer basket behind it.

Method

  1. Step 1: Set the air fryer to 190 °C. Halve 400 g baby potatoes and cut 1 bell pepper into strips.

  2. Step 2: In a bowl, mix 2 tbsp olive oil, 2 tsp smoked paprika, 1 tsp salt and pepper into a spiced oil. Pat the potatoes dry, put them in the basket and stir through half of the spiced oil. Cook for 10 minutes.

  3. Step 3: Pat 300 g chicken thigh fillet dry and toss it, together with the bell pepper, in the rest of the spiced oil. Give the basket of potatoes a shake, add the chicken and bell pepper and cook everything for 15 minutes. Turn the chicken and shake the potatoes halfway.

  4. Step 4: Meanwhile, finely chop 1 handful parsley and 1 clove garlic. Stir the garlic and half of the parsley into 100 g Greek yoghurt.

  5. Step 5: Cut through the thickest piece of chicken: the meat should be white all the way through, with no pink, and the juices clear. If the chicken is not quite done, give it 2 to 3 minutes more. Scatter the rest of the parsley over the chicken, potatoes and bell pepper and serve with the yoghurt.

About this recipe

Everything goes in the same basket: the potatoes with a 10-minute head start because they need the longest, then the chicken and red pepper. The yoghurt with parsley adds something cool, and the oven stays off.

next time a squeeze of lemon in the yoghurt

Tips

  • No chicken thigh fillet? Chicken breast works too, but it dries out faster. Check the thickest piece a few minutes earlier.
  • Cooking for a lot more people? Do it in two rounds. In a full basket the hot air can't get between the pieces, so nothing crisps.
  • No smoked paprika? Ordinary paprika works too, it just tastes less smoky.
